This wine was manually picked in the El Paraje del Seis vineyards in 2007, a farm with excellent ventilation, pure air, and close proximity to a stream. It is located at 510 meters above sea level at northwest direction. Sandy loam soil. Extraordinary balance between leaf surface and production. Grape variety: 100% Tempranillo, late ripening.
The grape berries are taken out of the bunch and stored for 48 hours at a temperature of between 5 and 10 degrees in a warehouse. We then perform low-temperature fermentation, which turns sugar into alcohol. With an inventive disintegration mechanism in which the "hat" is completely buried in the liquid, we combine skin, seeds, and liquid. This is how we extract more color and aroma from the variety in our soil, giving Paco Garca Seis' signature touch of violets and blackberries.
Six months are spent polishing the fruit of this wine in 225 liter French oak barrels before it is bottled and made available for your enjoyment.
